Only Custom Fields can be hidden from Table View. To hide them, click the "Custom Fields" button on the top toolbar and select which columns will be active on this project. Default columns (the ones available under the Columns menu) can't be hidden.
No, at the moment Table View can't be exported, but you can create exports of Gantt view with all columns enabled to mimic how Table View would look.
